Thursday: Day 8

(I love hot wings.. but when I sat to eat.. I realized I couldn’t have ranch dressing..
I love soaking hot wings in ranch dressing.. but I survived.. lol)

We decided to take a trip to New Hampshire.. to my aunt and uncle’s home.  We will be leaving Friday evening and coming back really early Sunday morning. Anna still has a lingering cough.. she can’t seem to get rid of it..

Friday: Day 9


Breakfast: nothing
Lunch: Salad with hot chicken strips
Dinner: Arby’s Chicken and bacon sandwich ( I literally ate out of the sandwich.. even pulled off the cheese.)  I was very very tempted to eat more of this but I quickly threw the bread into the bag to get it out of sight.  Aslo had a can of root beer . 


Friday Night was hard because we were on the road and really needed to stop somewhere to eat and stay awake.. the soda was from a rest area. 


Saturday: Day 10


Annette tried so hard to help me with foods.. she made an egg casserole (with spinach and carrots shredded, I think) .. topped with tomatoes and then put cheese on it .. when she realized what she did.. she served me.. after she scraped off the cheese on my portion..


My hubby wanted to go on the Anheusier Busch tour.. which was free.. at the end of the tour we got free samples of soda and free pretzels.. well I was not thinking at all.. totally memory loss.. I went and got my soda.. then the lady came by with pretzels.. I grabbed a bag for me and one for anna.. sat down and ate it while we talked.. as we were leaving the building.. I suddenly remembered.. I grabbed anna’s bag to read and sure enough.. WHEAT!!


Oh well.. moving on.. 🙂


Anna had been coughing alot at night.. so bad she can’t sleep.. well I felt horrible because I had no clue what was going on with her.. Then Annette mentioned croup.. she was familiar with it and said it sounded like it.. So we decided to go home.. I felt horrible because Annette has a 3month old and a 3 year old.. She assured me that it was fine.. but we decided it was best to go home.. so we drove a very long drive at 10:30pm.  Angel and I were both falling asleep.. (I have to stay awake to make sure he is awake..) so he stopped to get two burgers and I got some fries (after an hour of driving) .. then at the second hour we stopped at a gas station.. I grabbed a soda and corn chips.. Angel grabbed a soda and beef jerky.. I at the corn chips slowly for the next hour.. we made it home safely and Anna is doing much better.. so here is the list.


Saturday: Day 10


Breakfast : Egg casserole with orange juice
Lunch: 1 bag of pretzels.. OH NO!
Dinner: steak, asparagus, and broccoli and water with lemon



Sunday:
I decided that Annaleah’s coughing would not be good for sunday school.. I was supposed to be teaching.. I haven’t been there for four week’s now due to sickness in the house.. But the co teacher was away on vacation.. so I called pastor and explained the situation.. they ended up putting my student in Angel’s class..


Tonight, we really needed to go shopping .. Anna seemed to be doing better.. so I had Angel drop me off at Stop & Shop.. while he went to church.. When he came back I was almost done.. He told me.. “Pastor is here” I was like what?? Oh no.. so I told Anna.. let’s go.. we gotta hurry.. I turned and there he was.. LOL.. talk about getting caught.. lol.. Of course he didn’t say anything.. but honestly.. I wasn’t sure if Anna was doing better or not.. I didn’t want to take the chance of anna infecting the nursery.. Oh well.. life goes on.. 🙂

Sunday: Day 11
Breakfast: Oat cereal and rice milk
Lunch: almonds and rice crackers with jam
Dinner: Sweet and Sour Ribs, pickled cucumbers, Brown rice topped with summer squash and onions (sauteed), and avocado. 
Snack: Soy milk (chocolate : Sorry Katy.. just had too ) and 5 small wheat & gluten free chocolate chip cookies..


I am starting to have a really hard time.. I so badly wanted to eat a sandwich for lunch.. or grab some milk.. It was pretty easy before .. but now I am telling myself.. I did this long enough.. it is time to stop.. and it is not good to think that way.. no one is telling me this.. I am having an inner battle over this.. like is that one candy bar going to really hurt..!  I must keep going for 3 weeks… that is what I committed to..


Oh.. I am going to my mom’s next week.. and she isn’t using her juicer.. so I am going to borrow it again.. Let’s see if I use it this time.

Day 7

I guess I wasn’t very hungry today.  We did go and purchase a vac.  Today was also the La Leche meeting in my home and of course lunch with Stephanie to follow.  It is so nice to have someone to share certain issues with.  I am also in shock because I did everything on my to do list.. I even got to spend great quality time with anna.. first we sang songs.. then I had an idea.. (after a fish song) and we made colored fishes.. attached them with magnets and made a fishing pole.. what fun to watch her fish.

Tonight was the Premiere episode of Gilmore Girls.  I forgot how much I missed that show.  A small town like that sounds like so much fun.  I do wish Loralie and her mom would get along a little better.  I feel so bad for the mom.. she just won’t share how she really feels.. can’t imagine how hard it would be to keep it all bottled up inside like that. 
 
 
 

My Vac exploded!!  This is what I found.. it is a piece of my Vac.  Now I have to go out tomorrow and buy another one.. ugh..

I got this in my email and just had to share.. it really touched my heart.







Sometimes in our everyday lives we tend to forget what’s going on elsewhere in the world and that the brave men and women of the service are just like you and me. They have family and friends back home who love them very much and are praying for their safe return.



In my quest for a wheat free and dairy free diet.. I found this recipe.  I made this last night and hubby and I were very impressed. 


Quick and Easy Meat Loaf


2 lbs ground beef
1cup Old Fashion Oats
3/4 cup catsup, divided
2 eggs, slightly beaten
1 small onion, chopped
1/2 tsp pepper


Preheat oven to 350.  Combine ground beef, oats, 1/2 cup catsup, eggs, onion, pepper and 1tsp salt if desired.  Mix well.  Press into ungreased 9x5x3 inch loap pan or shape into loaf and place in shallow baking pan.  Spread remaining 1/4 catsup over top.  Bake 60 – 75 min.  Let stand 5 to 10 minutes before slicing.   Makes 8 servings.


 


Day 5

Smoothie – bananas, orange and strawberry

Rice crackers

Chicken breast with lettuce, tomatoes, cukes, radishes, raisens, and purple onion w/ lemon, garlic & olive oil dressing..

Baked Acorn Squash w/ cinnamon and olive oil

Meatloaf (cooked with oats instead of breadcrumbs), mashed potatoes, and corn

1/2 cantalope


Wow!!  I can’t believe I am on day 5..



Saturday: Day 3

Breakfast: Oatmeal with apples

Wedding:

    appetizers: celery, carrots, radishes, grapes, and strawberry ( about 2 each )

Kept hands off of the various cheeses, crackers, dip, popcorn chicken, coconut chicken and egg rolls..

    Meal: salad, chicken, potaotes, carrots, cauliflour.

Kept hands off rolls, and cake

Late night snack: sweet pepper jam on rice crackers.

 

Sunday: Day 4

Breakfast: Oat bran cereal with rice milk

Lunch: Rice cakes with Peanut butter

Dinner: two hot dogs with sweet potato & 1/4 avacado

 

The Wedding was beautiful!  I had a great time.  Mom and Dad slept over last night and Bill and Danielle took them home today.  It is always nice to spend time with them.
